I absolutely love snacking on fresh veggies in the summer! One of my favorite combinations consists of tomatoes, zucchini, and summer squash. It’s easy to make, works well as a side dish or as the main meal, and tastes amazing.
Preheat the oven to 340 so it can warm while the veggies are being prepped. These are the ingredients you’ll need: squash, zucchini, tomatoes (I think the Campari tomatoes taste best), olive oil or a buttery cooking spray, grated parmesan cheese, garlic salt, and pepper. The number of tomatoes, zucchini, and squash used is up to you. The amount varies depending on how many people you’re serving and if it’s a main meal or side dish. When I make this dish for myself as a main dish for lunch, I use 1 squash, 1 zucchini, and 3 or 4 tomatoes.
The Campari tomatoes I prefer to use.
Slice the squash, zucchini, and tomatoes approximately a quarter to a half an inch thick. Cover a pan with aluminum foil, then lightly coat the foil with olive oil. TIP: You can spray with a buttery cooking spray as a substitute, but I think the olive oil tastes better. Add the squash and zucchini on top of the foil first–the tomatoes will be added in later. Lightly drizzle or spray olive oil on top of the veggies, then add parmesan cheese, garlic salt, and pepper to taste.
I obviously prefer to go a little heavy on the parmesan cheese. 🙂
Once the oven is has warmed to 340, put the zucchini and squash in for 10 minutes. After 10 minutes, add the tomatoes to the same pan. The tomatoes will get too mushy if you cook them as long as the other veggies, so that’s why the zucchini and squash cook a bit first. Add seasoning to the tomatoes, then pop everything back into the oven. Cook for another 15 minutes, or until the cheese is melted and slightly bubbly/brown on top.
The tomatoes add a bit of zesty flavor to the recipe and are my favorite part.
