Anyone in need of new salad ideas for the upcoming week? Today's share is a very easy one! I probably sound like a broken record when I say that, because all of my salads are easy. Let me just say that this one is no exception, because it can be assembled in minutes.
This ingredient list will make 2 salads the size of the salads pictured above.
Rinse the lettuce leaves well and add them to 2 salad bowls. Split the shredded chicken evenly amongst both bowls, then split the mandarin oranges and dump them in each bowl. Next, split the pecan bits and the dried cranberries evenly amongst the 2 salads. I top this salad off with Brianna's Home Style Poppy Seed Dressing — one of my guilty pleasures. It's sweet, creamy, and delicious…and not exactly low fat. 🙂
Not to tempt you or anything, but here it is with the addition of blueberries and Brianna's Poppy Seed dressing.
This salad has a good amount of protein thanks to the nuts and chicken, and the mandarin oranges contribute high levels of Vitamins A and C. All in all, it's as healthy as you choose to make it!
