Anyone in need of a new salad idea for the upcoming week? Today's share is a very easy one! I probably sound like a broken record when I say that, because all of my salads are easy. Let me just say that this one is no exception, because it can be assembled in minutes.

Salad with Cranberries & Mandarin Oranges
This ingredient list makes 2 salads the size of the salads pictured above.
YOU’LL NEED: 3 cups torn lettuce leaves + 3/4 cup cooked and shredded chicken breasts + 3/4 cup mandarin oranges + 1/4 cup finely chopped pecans + 1/2 cup dried cranberries + 1/4 cup brianna's home style poppy seed dressing (optional) + 1/4 cup blueberries (optional)
Rinse the lettuce leaves well and add them to 2 salad bowls. Split the shredded chicken evenly amongst both bowls, then split the mandarin oranges and dump them in each bowl. Next, split the pecan bits and the dried cranberries evenly amongst the 2 salads. I top this salad off with Brianna's Home Style Poppy Seed Dressing — one of my guilty pleasures. It's sweet, creamy, and delicious…and not exactly low fat.
TIP: For a slightly less healthy version, you can add freshly cooked bacon bits. #everythingisbetterwithbacon For a healthier option, fresh blueberries make a fantastic addition.
This salad has a good amount of protein thanks to the nuts and chicken, and the mandarin oranges contribute high levels of Vitamins A and C. All in all, it's as healthy as you choose to make it!
