With that in mind, here's an easy recipe for a quick spinach salad with chicken and candied pecans.

Spinach Salad with Chicken & Candied Pecans
This salad only had 4 ingredients and makes 1 salad the size of the one pictured above.
YOU'LL NEED: 1 cup Baby Spinach Leaves + 1/2 cup Shredded Chicken + 1 Sliced Tomato + 1/4 cup Candied Pecans [Dressing is optional]
I love the candied pecans, because I have a bit of a sweet tooth and they add just the touch of sweetness that I crave! The pecans and chicken both have protein to keep me full for a few hours, and the spinach is loaded with iron.
I cook chicken breasts each Sunday, shred them, divide them into containers, and store them in the fridge for easy meal prep during the week. It's a great system that makes lunch prep very easy.
I've also made this salad with sliced grapes and apples in place of the tomatoes, and that version tastes great, too. It's a good option whenever you're in need of a quick and healthy lunch! Let me know if you try it and like it!
