Simple Salad Idea: 5-Ingredient Salad with Blueberries & Pecans

Today's salad is another really delicious one! It's chock full of fresh spinach and cucumber, and it's a filling lunch option when you're trying to eat healthy. Since I recently signed on to do a fitness challenge for the next 8 weeks, I'm trying my best to eat right! Read on for instructions to make this healthy, spinach-based salad with blueberries and pecans. It only has 5 ingredients, and there's nothing that needs to be cooked.

5-Ingredient Salad with Blueberries & Pecans

This ingredient list will make 2 salads the size of the one pictured above.

YOU’LL NEED:  3 cups baby spinach leaves + 1/2 cup blueberries + 1 cup sliced cucumber + 1/4 cup dried cranberries + 1/4 cup crushed pecans + dressing (optional)

Rinse and drain the spinach leaves and then add them to 2 salad bowls. Split the cucumber and rinsed blueberries evenly amongst both bowls, then add dried cranberries. Sprinkle pecan bits on the salad to finish it off, then add your favorite dressing. I always add a protein source to my salads, so that's why I've included pecans.

TIP: It’s best to rinse blueberries right before you eat them. They develop mold too quickly if you rinse them then put them back in the refrigerator, so only rinse the amount you’re plan to eat in one sitting.

Blueberries are a powerful antioxidant and are considered a “superfood” for their ability to improve night vision and reverse short-term memory loss, so I try to fit them in as many of my meals as possible. They're also great mixed with Cheerios and milk if you're ever in need of a quick breakfast option.

TIP: Try pairing this with Braswell’s Raspberry Vinaigrette Dressing. It's fat free and only has 50 calories in 2 tablespoons, and the flavor is the perfect combination of sweet + tangy.
